The Protective Layer of an Egg: Nature's Built-In Shield
An egg may appear delicate on the outside, but it is protected by a remarkable natural defence system. One of the most important features of an egg is its protective outer layer, known as the cuticle or bloom. This thin, invisible coating covers the shell and plays a vital role in keeping the egg fresh and safe from harmful bacteria.
The cuticle is applied to the shell while the egg is still inside the hen, just before it is laid. Although it is extremely thin, it acts as a natural seal that covers thousands of tiny pores in the eggshell. These pores are essential because they allow oxygen to enter and carbon dioxide and moisture to leave, helping the developing chick breathe if the egg is fertilised. At the same time, the cuticle helps prevent bacteria, dirt, and other contaminants from entering through these pores.
One of the biggest benefits of the protective layer is its ability to extend the freshness of an egg. By reducing moisture loss, the cuticle helps keep the egg white firm and the yolk centred. Eggs with an intact bloom generally stay fresher for longer when stored correctly.
Many people are surprised to learn that washing fresh eggs can remove this natural coating. In some countries, eggs are washed and sanitised before they reach supermarket shelves. While this cleaning process improves appearance and removes visible dirt, it also strips away the cuticle. For this reason, washed eggs must be refrigerated to slow bacterial growth and maintain freshness.
In contrast, some regions choose not to wash eggs before sale. Instead, they rely on the egg’s natural protective coating to keep bacteria out. These eggs can often be stored at room temperature for a limited time, provided they remain clean and uncracked.
The eggshell itself also contributes to the egg’s protection. Made primarily of calcium carbonate, the shell provides strength while working together with the cuticle to form an effective barrier. Beneath the shell are two thin membranes that offer another layer of defence against bacteria and help maintain the egg’s structure.
To preserve the protective layer, it is best to handle eggs with clean hands and avoid washing them until just before use, unless local food safety recommendations advise otherwise. Cracked eggs should be discarded or used immediately if safe to do so, as damage to the shell and cuticle allows bacteria to enter more easily.
